Nowadays, sushi has become a very popular, fashionable food, and freshness in its preparation plays a major role, since seafood tends to spoil quickly. In Japan and the United States, special sensors have been developed for conveyor-belt sushi restaurants and these RFID radio frequency identification (RFID) tags have been attached to sushi plates.

Kaiten sushi, as it is called, moves around the restaurant on small plates so that guests can select the desired piece of sushi themselves. Sushi must always be fresh, so restaurant workers must monitor and determine how long a given piece of sushi has been sitting on the conveyor belt.

By reading the RFID tags with hand-held readers, waiters and chefs can obtain important information, such as what type of sushi is on each plate, when it was prepared, and by whom. This information helps restaurant management reduce waste by preparing only the types of sushi that are in short supply. Thus, with the help of RFID technology, restaurants track the expiration dates of sushi, and customers can enjoy their dinner with the confidence that the sushi is truly fresh.
